Maggie's Mother's Day Menu

We believe that any Sunday is worthy of spending time across the table with Mum, but especially so on Mother's Day. This menu has been developed around the idea of keeping things simple; a selection of recipes that not only show Mum how special she is, but that can largely be made ahead of time to take the pressure off the day and enable everyone to spend more time together.

Sparkling Ruby Cabernet Cocktail with Tangelo and Campari

Cheers to mum with this refreshing cocktail, or for non-drinkers, start with a glass of Maggie's non-alcoholic Sparkling Chardonnay or Sparkling Ruby Cabernet.

Cheese platter

No matter what the occasion, a generous platter of nibbles always goes down a treat. With a choice of cheeses, pate, Maggie's new preserves, fresh and dried fruit, nuts and crackers, this will set the scene for the wonderful meal ahead.

Mustard Pear Stuffed Chicken Breast

This recipe is certain to become a family favourite. The stuffing under the breast skin keeps the chicken deliciously moist whilst also infusing the wonderful flavour of the mustard pears. The stuffing can be made ahead of time and stored in the fridge - you'll just have to soften the mixture on the day so it's easier to place under the skin.

Dark Chocolate and Coffee Vino Cotto Mousse

And to finish, something to truly celebrate the wonderful marriage between chocolate and Coffee Vino Cotto. These mousse cups can be made up to 4 days in advance and kept in the fridge until ready to serve. Simply top with fresh raspberries and enjoy!

800g (2 x 400g) free range chicken breast, skin on

Pantry:

200g bittersweet dark chocolate 70% cocoa

1/4 cup caster sugar

2 tbspn Verjuice

3 tbspn Coffee Vino Cotto

4 free range egg yolks

1/4 cup Dried Mustard Pears

Sea salt

3 tbspn Extra Virgin Olive Oil

Nuts of choice for cheeseboard

Dried fruit for cheeseboard

Quince Paste or Quince & Ginger Preserve

Crackers or lavosh

Charcuterie of choice for cheeseboard

Fresh produce:

1 punnet fresh raspberries

1 punnet fresh strawberries for cheeseboard

2 tbspn flat leaf parsley

Dairy:

1 1/2 cups thickened cream

1/4 cup unsalted butter

Wheel of Triple Cream Brie

Wheel of Camembert

1 tub Pheasant Farm Pate
