Paw Paw, Mango & Rocket Salad

Step 1: Peel and seed the avocados, then drizzle with the Verjuice to prevent them from discolouring. Cut into bite-sized pieces, then place in a bowl. Add the paw paw, mango and rocket.

Step 2: Place the lime zest and juice in a small bowl, then whisk in the olive oil and season to taste with salt and pepper.

Step 3: Just before serving, dress the salad with the lime dressing. Serve at once.

Ingredients

  1. 2 large avocados
  2. 40ml 2 tbspn Verjuice
  3. 1 red paw paw seeded, peeled and cut into 2cm pieces
  4. 3 mangoes cut into long, thin slices
  5. 2 large handfuls rocket
  6. Zest of 2 limes finely grated
  7. 2 tbspn lime juice
