Salt and Pepper Squid with Verjuice Mayonnaise

Step 1: Preheat a deep fryer to 180C.

Step 2: Rinse the tentacles and pat dry with kitchen towel.

Step 3: Place the tentacles into the plain flour and coat well, then shake to remove any excess flour.

Step 4: Place the tentacles into the deep fryer and cook for 1 minute, then remove and place onto kitchen towel to drain. Fry the tentacles in 3 batches so that you don’t overcrowd the basket.

Step 5: Season with sea salt and freshly ground white pepper and serve immediately with Verjuice Mayonnaise and fresh lemon.

Tip: Specialty seafood stores should sell tentacles, however if you can’t find them, you can substitute with sliced squid tubes. If you don't have a deep fryer, place 2L of grapeseed oil into a large pot and place over a high heat. Bring the temperature up to 180C (use a digital thermometer), then turn the heat down slightly to ensure that the oil does not get too hot.
