Step 1: Fill a jug with three large handfuls of ice.
Step 2: Pour enough soda water to cover the ice, approximately half the volume of the jug.
Step 3: Fill the rest of the jug with chilled Sparkling Ruby Cabernet.
Step 4: Bruise the mint sprigs by squeezing gently in your hand, before pushing them down into the liquid and ice.
Step 5: Pour into individual glasses and top with extra mint if desired.
